SMOKED TOMATOES WITH BASIL VINAIGRETTE, SHANKLISH & SUMAC

It’s true, I love smoked foods – they add a beautiful roundness to dishes, and this recipe stands to this belief. Serves 4 as a starter or sharing

INGREDIENTS

4 Smoked tomatoes, each cut into 5 slices

150 ml (5 fl oz) Basil cordial

75 ml (2½ fl oz) olive oil

juice of ½ lemon

3 basil leaves, washed and finely shredded

1 ball mild shanklish (see glossary)

1 teaspoon ground sumac (see glossary)

1 tablespoon chopped flat-leaf (Italian) parsley

METHOD

Arrange the smoked tomatoes on a plate. In a bowl, mix together the cordial, olive oil, lemon juice and basil. Season with salt flakes and freshly ground black pepper, then drizzle over the tomatoes.

Crumble the shanklish all over the tomatoes and around the plate. Sprinkle with the sumac and parsley and serve.
